Mastering Fire with Andy Low N Slow

Cooking over fire is an age old tradition and for me, the purest form of cookery. The key is to understanding fire, how to light and manage fire and what fuel to use for different methods and ingredients.

I have 14 years of experience cooking over fire after teaching myself how to cook jerk in my Moms back yard. I moved on to smokers and all types of grill set ups eventually travelling to the Mecca, Texas, to study, gain experience and cook for family and ranch workers. I've cooked for thousands at the legendary Meatopia and Big Grill events in London and Dublin and ran my business for 11 years travelling the county at street-food events, private parties, weddings and restaurant takeovers.

I am excited to now be able to pass on my knowledge and experience in small, intimate classes on the beautiful Thorpe Estate in Tamworth.

Classes with be 15 people maximum with two options available (see below)

I am very excited to use world class equipment from the likes of Ironbrand, Weber, Kamado and Fire Made. We use Whittle and Flame charcoal and meat from Dunwood Farm. All courses will go through the criteria stated with lots of hands on experience and time to discuss what we are doing. Light refreshments will be available throughout the day with toilets available. Please be aware although we have cover these are very much outside courses so appropriate clothing is advised.

Want to learn how to BBQ?

An introduction into cooking with Fire £150

This course is for those with zero to little experience cooking over fire. We start from the absolute beginning with how we light a fire and what fuel to use, why fuel selection is vital and how to maintain a fire on various BBQs.

We then move on to how to create your own seasonings to use on meat and vegetables, Which cuts to use and learn how to grill steaks, spatchcock and grill chickens and cook beautiful seasonal vegetables over fire. We will prepare sides and touch on the basics of pickling, something i see go hand in hand with BBQ food plus making our own sauces.

I will touch on timings, how to rest meat and set yourself up to cook stress free for your friends and family.

This is followed by a group family style meal where we eat, chat through what we have done and you can ask me as many questions as possible.

Texas BBQ Class with Iron brand smokers £150

Im very excited about being able to teach on the incredible Ironbrand 120 gallon offset smoker. This is the perfect course for those with a little experience or starting out wanting to master offset smoker cooking. The cooker is a perfect size and not a million miles away from home style ones built to world class standards from years of experience by Jason.

We start my talking through the basics of how a stick burner works. How to start a fire and maintain one keeping temps consistent and smoke clean.

We will talk through the main cuts of Texas BBQ, the holy trinity brisket, ribs and sausage. Learn how to prepare, season and cook them. What to do with meat when it’s done, resting to maximise the quality and how to prepare sides to cook your own feast of Texas BBQ.

This is followed by a group family style meal where we eat, chat through what we have done and you can ask me as many questions as possible.





Where is the course held?

All courses will be held at the beautiful Thorpe Estate, Thorpe Constantine, Tamworth B79 0LH, approximately 10 minutes from Junction 11 of the M42. 


I want to book onto a course, how do I do this?

All courses and dates are shown in our Shop. Payment must be made in full at time of booking.


What happens if I need to cancel once Im booked on?

Please notify us as soon as possible if you're unable to attend a course you have booked onto. Up to 7 days notice - a full refund will be provided. Up to 72 hours notice - a 50% refund will be provided. Unfortunately we are unable to accept cancellations after 72 hours as it is unlikely we will be able to fill the space. However you can transfer the booking into someone else's name.


Do I need to bring anything with me?

Please feel free to bring a pen and pad to make notes.

All courses start at 10.30am and will finish around 3pm
